Used an olive cutter to remove the old compressed olive and the new one worked completely fine.

Softer than brass though a good seal and easier to remove if needed.
Modern 15mm compression fittings use brass olives. Brass olives are one use only, undo the joint and most times it will never reseal. Garbage. PTFE doesn't help. A Copper olive as a substitute =
success every time. Conclusion always replace the inadequate Brass olives with Copper ones from the very start.
